Alarm system and video camera is the best way. This way the police have something to go by. I wouldn't recommed trying to catch a thief yourself.

multiple video cameras that are totally hidden. Set a trap , if you know what is taken, if you can predict what will happen, set trip wires that will activate camera or bucket of paint falling on his head...
