Sweet corn like any other seed has a skin and the material inside. Our digestive system is not capable of digesting the skin, as it lacks the digestive juices(read enzymes) needed for this purpose. It is something like cows can digest cellulose(that make up the cell walls of plant cells), whereas we cant. The material inside the skin consists of starch (like rice),some proteins(like beans) and few vitamins & minerals.This our digestive system can easily digest. This can happen only if 1. the corn is well cooked 2. we chew the corn thorughly before ingesting it. If either of these does not happen, then the indigestable skin remains intact, and the digestive juices are unable to come in contact with the material inside , break it down, and absorb into our blood stream.
