It's camouflage. Not that the tall grasses are black and white but that when they are all running together it makes it very difficult for predators to single one out visually as it's just a blur of stripes moving. And their main predator is the lion and they are color blind so they can't tell they are black and white. Also the color helps to keep away the tsetse fly.
