  • The Japanese have a word for it. It is the balance of taste senses. I think it is called Umame (spelling might be off). So neither is more imortant than the other. It's more of finding the balance.
  • Neither as it is a careful balance of both plus the flavor 'salt'. Without salt the dish will fall flat even with the sour and the sweet.
