Sauce:(basic homemade BBQ sauce, this can be used with any recipe that calls for cooked BBQ sauce, ex. grilled chicken, ribs, etc.) 1/2 tsp. worshire sauce 1 C. ketchup 1/2 tsp. mustard 1/2 tsp. chili powder 1 C. brown sugar Spread over meatballs, bake at 350 degrees covered for 50-60min. *these are the best meatballs ever, They were my gmas famous meatballs, RIP!
  • This is my best recipe ChandaDiane: They are a hit everywhere I take them. HIGH COUNTRY BBQ BEANS INGREDIENTS: 1 15-ounce can pork and beans 1 15-ounce can pink beans, rinsed and drained 1 15-ounce can kidney beans, rinsed and drained 1/2 pound of hickory smoked bacon, cooked and chopped 2 cups smoked ham, chopped 1 large green pepper, chopped 1 large yellow onion, chopped 1 small green chili pepper, finely chopped 1 cup of light brown sugar 1/2 cup BBQ sauce 2-3 cloves garlic, chopped Combine all ingredients in large pot; mix well. Simmer covered for several hours, stirring often. Remove from heat when vegetables are soft. **Makes eight servings. Enjoy!!
  • Heres a fgavorite of mine! A bit labour intensive..but fun for a camping trip! Native American Planked salmon Preparing the salmon: One whole salmon, cleaned, scaled, and cut down the back as opposed to the belly. A hardwood plank, approx. two feet by four, and soaked well in the river or lake for a couple of hours. Cover it with foil wrap. Splay the cleaned salmon flat on the board and nail it in place. Take fine wire, and criss cross it from nail to nail to secure the salmon to the plank. Preparing the fire: About an hour before cooking the salmon, bring some hardwood to glowing coals. There should be sufficient coals to last about an hour and a half, depending on the size of the salmon. Place the planked salmon upright in front of the hot coals. Brush it with oil. (I like to mix the oil with a bit of lemon and worchestershire sauce). Keep basting it with the oil periodically. The last few times, include the salt and pepper to taste. When the salmon flakes at the meatiest parts, it’s done. Lay the plank and salmon on an outdoor picnic table, and let everyone help themselves.
