They do cook some of their fish, They also happen to like sushi, along with a lot of other nationalities. Lots of Americans like sushi too! :)

They do. Sashimi is just ONE style of dish. Your question is the equivalent of saying "Why do Americans only barbeque their chicken?"

Perhaps, way back when, there was no means of cooking and they learned that certain fish, eaten raw, was delicious...and certainly simple to prepare. Cooking fish can destroy many of the nutrients....perhaps the Japanes know something more than we do about the preparation of fish? Have you tried sushi? I love it.
