So we will have a simple enough question to answer.

For ease and range. Technically bassists COULD play most of their songs with just one string, but few really know note names above the octave mark (Fret 12). Extra strings make it easier to play, quicker to find notes, and changes the range from one and a half octaves to nearly four octaves. It just makes sense.

Most bass players would go crazy with one string. I know I would... I have a five string and going down to a four is even a challenge.

Bass patterns typically fall into the pentatonic shape, covering at least 3 strings allowing the player to reach an entire octave in 3 inches rather than 18+/- on a single string.
