I think a cheese blend is the best. I go to this one place for their grilled cheese. It's swiss, cheddar, and brie.

This is probably the hardest question ever to appear on AB!!!! I am going to go with brie, because I quite fancy some of that right now.

Here's what you do. Fill the sandwich with a nice sharp cheddar and some Gorgonzola crumbles, but not too much. Then, add butter to a pan and heat it, and sprinkle grated Parmesan on the pan but, again, not too much. When you have to flip the sandwich again, re-sprinkle some more Parm. It's like a party in your mouth.

Have you ever tried Halloumi? It is a greek cheese that doesn't melt when it is grilled it just kinda browns up into a salty, juicy yumminess. Halloumi. If you have tried it you would agree.

I like Gruyere because it tastes superb, and when you eat it melted it doesn't pull out into strings. A grilled cheese sandwich without bacon is a like a kiss without a moustache . . . or something.
