Are the diners on Hell's Kitchen actors or otherwise paid to be there (or maybe offered a free meal for participating)? Or do people actually make reservations for it?

Some people will do anything to get on TV. There's probably a long waiting list for their reservations. :o)

as an ex-restaurant patron, I can tell you that they're actors that have been cast. however, there's no compensation besides a free meal and the chance of getting some screen time.
