The greatest pianist of all time, who has the creditials to prove it, is Frederic Chopin, hands down! There are others who are excellent, but the amount of books of compositions he wrote and could play are enormous! There is no other pianist with this kind of record. Not even Liszt! If you can also compare the theory in the compositions, it shows it!
The best piano player I heard was Vladimir Horowitz. Dinu Lipattu I only know from recordings, but they sound very impressive. Then there are a few other great ones: Glenn Gould, Martha Argerich, Alfred Brendel, Friedrich Gulda for instance. A young and very promising pianist is Martin Stadtfeld.
Composers who wrote great music for piano are
Bach - His Well Tempered Clavier is a must (even is the piano as we know it today wasn't even invented at his time)
Beethoven
Schubert
Liszt
Schumann
Skrjabin
Chopin
Billy Joel.
Anyone ever heard of Art Tatum? Clearly Art is the KING!
I'm going to have to go with Franz Liszt. Outside of the fact that he was quite the virtuoso pianist, he was the first to prove that a piano can be a stand-alone instrument.
Rachmaninov for technical ability and grat huge capable hands. And Chopin for writing such dynamic compositions that stir the soul.
For me that would be Beethoven!

Billy Powell, from Lynyrd Skynyrd.
Sadly now deceased, Billy Powell's piano style gave Lynyrd Skynyrd that extra dimension that made them stand out above other Southern rock bands.
I haven't heard enough of the other pianists to say that I think he's the greatest of all time, but my favorite is Oscar Peterson:

Liberace!...not the straightest or the least glittery, but the best
Art Tatum and Oscar Peterson!! That is it. They masterfully played Jazz, Classical and stride. None of these other pianists could do that.

Best? Hard to say who is the best. I think Petrucciani is better than Dave Grusin. Grusin
is contemporary. Modern sounds more complicated.

If you are a person who does not like modern
or bebop, then you would NOT like Monk.
A very innovative musician. A good friend
was Bud Powell, another great pianist.
Both wrote most of their own pieces.

I haven't heard that many pianists and I must say that Chopin is really good but recently I've listened to River Flows in You by Yiruma and I really like it and he's probably my favourite =) Im a twilight fan so it explains why i like him so much but I think his music is really good and it really moved me =)
