G'day Sloppywet, Thank you for your question. There are plenty of meatloaf recipes and ideas out there. Variations include adding cheese, oatmeal and tomatoes/tomato sauce. You can add toppings including potatos I have attached some for you. I add lipton onion soup mix, garlic powder, and crackers. Top it with ketchup! Very Yummy!

I saute onions till caramelized, maybe some bell peppers and add that to the meat. If I want to go Italian, I'll add Italian sausage browned and olives, sun-dried tomatoes, a little dash of wine on some breadcrumbs, Parmesan cheese. Mexican meatloaf can have onions, salsa, garlic, and little cubes of jack cheese inside. Spicy tomato sauce on the outside. Get fancy and lay your ground meat flat and lay deli meats on top and a row of hard boiled eggs down the center. Roll up for a really pretty meatloaf when you slice it:-)

I like my meatloaf with ketchup, onions & green peppers in it. My husband will not eat any of those things so I tried one from Paula Deen on the Food channel. Its called bacon cheeseburger meatloaf. Everyone loves it.. even the kids! I put the ketchup and stuff in when no one was looking and they never knew!!! I left off the french fried onions Bacon Cheeseburger Meatloaf 1 pound ground chuck 10 slices bacon, cooked and crumbled 1 (8-ounce) package sharp Cheddar, grated 2 large eggs, lightly beaten 1/4 cup bread crumbs, toasted 1/4 cup mayonnaise 1 tablespoon Worcestershire sauce 1/4 teaspoon salt 1/4 teaspoon ground black pepper 1/3 cup ketchup 2 tablespoons prepared mustard 1 (3-ounce) can French fried onions Preheat oven to 350 degrees F. In a large bowl, combine the ground chuck and next 8 ingredients, mixing well. In a small bowl, combine the ketchup and mustard. Stir 1/4 cup ketchup mixture into meat mixture, reserving remaining ketchup mixture. Press meat mixture into a 9 by 5 by 3-inch loaf pan, or shape into a loaf and place on a rack in a broiler pan. Spread remaining ketchup mixture over loaf. Bake 40 minutes. Top with French fried onions; bake another 10 to 15 minutes, or until meat is no longer pink.

I make a Mexican type one. To the meat and onions I add garlic, worcestershire sauce, some taco seasoning, a little extra cumin, and a few good spoonfulls of salsa. The salsa makes it moist and it is sooo good. Makes great sandwiches the next day, too. Love my meatloaf - it's one of the best comfort foods in the world. Have a bunch that I do. I have a cheeseburger meatloaf that is good too but I don't have access to it at the moment.

Cheese-stuffed Meat Loaf 2 tablespoons olive oil 3/4 cup finely chopped onion 1/2 cup finely chopped celery 2 teaspoons minced garlic 1/2 cup minced Italian parsley 1 teaspoon salt 1/4 teaspoon pepper 1 3/4 teaspoons chili powder 1 1/4 teaspoons cumin 3/4 cup salsa 2 eggs 1 1/2 pounds lean ground beef or a mix of lean ground beef and ground turkey 3/4 cup bread crumbs 1/4 pound sliced mozzarella cheese Heat the oven to 350º. In a skillet, sauté the onion, celery, garlic, and parsley in the oil over moderate heat until softened but not browned. With a slotted spoon, transfer the vegetables to a large bowl. Add all remaining ingredients, except cheese, to the vegetables. Mix well with your hands. Transfer half the mixture to a 9- by 5-inch loaf pan. Place mozzarella slices on top, then cover with the rest of the meat mixture. 4. Bake for 75 to 80 minutes or until a meat thermometer reads 170º. Cool and chill. Wrap tightly in freezer foil. Place in a resealable plastic freezer bag. Label and freeze. To serve: After thawing and unwrapping, bake in a covered pan at 400º for 20 to 30 minutes.

Meat Loaf 1 lb ground beef 1 cup tomato juice 1 cup chopped or diced onions 4 heaping spoonfuls minced garlic in juice 1 egg 1 can Pringles potato chips Put ground beef, egg, tomato juice, onions and garlic in a bowl. Mix until well blended. Put Pringles in a zipper bag. Crush with a rolling pin or similar object. Add crushed potato chips to the rest of the ingredients. Mix until well blended. Put the mixture in a Pyrex pan. You could bake this, but I don't know time or temperature. I always put it in the microwave for 25 to 30 minutes.
