It's packaged into plastic bags, labeled as a biohazard ('red bagged') and destroyed the same way all biological waste from hospitals is destroyed: Contractors pick up the waste containers and take them from the clinic or hospital and incinerate them. Some forms of biologial waste -are- sterilized in huge autoclaves and put into landfills, but any excised surgical waste is most definitely incinerated.

Ever see fight club? (if not you must watch it) You could use that fat to make glycerine. then you can either make soap or bombs. =)
