There are 2 ways, one chemical and one gas, brands such as Cafe Hag, gold blend use Carbon dioxide (CO2),cheaper brands use methylene chloride (YUK) Suggest you buy the Cafe hag type !

CO2, and something like dry-cleaning fluid, some kind of -ethylene. No wonder......
