Pesto is just lots of ground or crushed basil and olive oil. Use an olive oil in a dark bottle (light distroys olive oil.) and most good olive oils are only in dark bottles. Extra virgin or not depends on your preferance.

Just exclude the nuts from a normal recipe. :P Pine nuts are expensive and I tend to be allergic to nuts anyway, so I exclude them from the recipe, and I just throw stuff in until it tastes right.

you could try finely chopped mushroom instead of nuts but it would change the taste but might be nice.
