One way would be to first have it copywrited, there are many ways to do this but the simpilest and most cheapest is called the poor mans copywrite. You put the poem in an envelope and get a black marker and scribble all over the seal. Send it to yourself then never open it again. The once you have done that, you can send it to readers digest and they may publish it.
