I took a class and was certified 4 years ago. Big book, but it was a college class for culinary. The instructor for the course will go over what you need to know, and most of it is common sense. I found it to be a very easy class.

It's alot of material, but the test itself is easy. They want you to participate mostly to scare you to death with restaurant horror stories so you'll be sufficiently mortified and take it back to your restaurant with you.
