What is sopressata?

  • It is a type of Italian sausage. It is a specialty slow-aged salame that resembles pepperoni, but instead has a rectangle shape. Soppresata has a more robust flavor than pepperoni because of the sweet fennel, hot peppers, paprika and red wine it contains.

    It's an Italian dry-cured salami that has hot peppers and mots of garlic in it. It's usually pork but occasionally people will make it with beef. It's often pressed while it dries, that's how it got it's name and why it is often flatter. It's got a good spicy kick to it. It's wonderful served as part of antipasto with olive oil dribbled on top.
