Only if the interviewer offers his or hers. Some do not seem to want to shake hands. I always thank them for their time, however, even if I know that I am not going to get the job.

I would hope that the interviewer would offer his / her hand to me at the end of an interview. If not, I would wonder why a person, lacking such a simple social skill, would be working for a company's personnel's department.
