I would say Texas Hold Em. Most casino games involve a lot chance and require a lot of luck to be profitable at. But in hold em you get to play not just cards but people. That's why there is a such thing as professional poker players. There are people who consistently do well at hold em because of their skill-not just their luck.

Of the table games, Blackjack (and its variants, such as Spanish 21) have the lowest house advantage, especially if you learn the strategy that's been developed for it.
