Because Kosovo is detaching itself from a larger entity. Taiwan, Tibet, Hong Kong and Mongolia are some of the places that China wouldn't like declaring independence (albeit Taiwan has its own sovereignty). Opposing Kosovo's independence is China's declaration of supporting unity.
