The point of the self-checkout, after all, is to reduce the workforce. It would make little sense to have a dozen people watching. There have been developments in loss-prevention computer surveillance, though. Cameras at the check-out station and throughout the store can identify suspicious behavior and alert personnel to watch more closely. There was an interesting article in a recent issue of Popular Mechanics on the subject.
