The menus in all my Microsoft applications keep shortening themselves so as to only show important and recently used items. I want to see all the options! How can I turn that off?

If you right click on the taskbar, and select properties you'll get the properties dialog. In that screen(maybe in advanced options) uncheck the "Show Personalized Menus" That'll fix it.
