As the co-owner of a "meat eating household" kitchen, I can tell you what is in my kitchen.

Block #1 - 4" paring knife, 5" fruit knife, 7" boning knife, 10" bread knife, 8" utility knife, 10" utility knife and 12" butcher's knife.
Block #2 - 5" paring knife, 7" utilty knife, 8" utility knife, 10" bread knife, 12" butcher's knife, kitchen shears and 10" sharpening steel.
