What is minced to make mince pies?

Um... I'm of Asian descent. Most of our minced pies involve pork and usually some kind of herbs/berries to go along with it.

Minced pie, or minced meat pie, used to be made of very thinly minced, spicy meat by-products. It was mixed together with fillers, like beans, potatoes, oatmeal, and various fruits. Apparently, more modern American recipes leave out the meat.
