  • I know of Pork cracklin serve with your roast dinner its lovely. I do it this way: Just before you put your joint in the oven you have to score the skin first , then rub it over with a little white vinegar to removed any oil/grease off the skin, then rub in rock salt Put in a very hot oven for 30 min's then lower down to normal temp It is gorgeous

  • Oh yes. it is made from fatty pig skin. cut into 1 to 2 inch strips drop into very hot grease until lightly browned. let drain on paper towel. lightly salt enjoy! or you can boil slab of skin until tender then place on grill . when crispy on both sides pour on some barbque sauce this is called a cracklin sandwich. thats some good southern cookin!!!
