  • I would not think that would be an issue as the alcohol will evaporate leaving only the liquid
  • They do? I guess I've been making mine wrong all these years... BTW, won't the alchohol evaporate during cooking anyway?
  • That depends on what kind it calls for. If it calls for wine or beer, there are alcohol free wines and beers. Most of the alcohol evaporates in cooking; you can also boil it if you want to make double sure it's out of it.
  • Just add the equivalent measure of broth, or water. The taste will just be different, the broth will make it a little richer.
  • Broth, I would use beef broth for a dish with red meat, and chicken broth for a poultry dish.
  • I have never used wine in stew. If the quantity of wine called for is small (less than 1/2 cup) I would substiture soya sauce, teriyaki sauce or possibly even balsamic vinegrette. I hope that helps!
