I would not think that would be an issue as the alcohol will evaporate leaving only the liquid

They do? I guess I've been making mine wrong all these years... BTW, won't the alchohol evaporate during cooking anyway?

That depends on what kind it calls for. If it calls for wine or beer, there are alcohol free wines and beers. Most of the alcohol evaporates in cooking; you can also boil it if you want to make double sure it's out of it.

Just add the equivalent measure of broth, or water. The taste will just be different, the broth will make it a little richer.

Broth, I would use beef broth for a dish with red meat, and chicken broth for a poultry dish.

I have never used wine in stew. If the quantity of wine called for is small (less than 1/2 cup) I would substiture soya sauce, teriyaki sauce or possibly even balsamic vinegrette. I hope that helps!
