Because human beings are obsessed with logic and reason and language. We try to put everything into little boxes, or try to frame ideas with language that becomes meaningless upon closer examination. We cannot define something that exceeds definition, that is unknowable, and that is based in a reality that is subjective and supported by nothingness.

The word "God" is defined in any dictionary you care to look up.

The moment you say "he" you've defined God. If you say "he is beyond defining", that's another definition. If you suggest "he has a nature" that's more definition. Humans try to pin God down because they try to pin everything down: we're addicted to conceptualization. Why? Because ideas are the junk food of understanding: convenient, easy to obtain, full of fat, and offering only limited nutritional value. To approach that which is beyond definition, one must let go of this addiction. That's scary.

I don't know, why are you asking this question? Do believe in God, or a God of some sort? Many, many, many people try to come up with their own idea of who, or what "god" is, but I have found that THE best way to find out who, or what God is, is to read what He says about Himself. Read the Bible, start today, I found the answers there.
