  • One place to look is allrecipes.com, there are several variations. Here's one I found on my site: Swedish pancakes Yield: 20 Servings 1Egg 3/4 c Milk 1/4 ts Salt 1/2 c All-purpose flour 1 ts Baking powder 1 tb Sugar 2 tb Butter melted Lingonberry jam Dairy sour cream Over medium heat preheat platter pan (cast iron or cast aluminum Swedish pan with shallow round indentations for making thin pancakes about 3" in diameter). In large bowl beat egg; stir in milk salt flour baking powder and sugar until batter is smooth. Stir in melted butter. Grease cups in hot pan with shortening or butter. Spoon 2 rounded tablespoons batter into each greased cup. Cook about 1 minute on each side or until golden brown. Serve immediately with jam or jelly and sour cream. Makes 20 pancakes.
  • 3 eggs 1 c. milk 1 1/2 c. sifted flour 1 tbsp. sugar 1/2 tsp. salt 1/2 c. cream (or milk) 2 tbsp. butter, melted Confectioners sugar red currant jelly Beat eggs until very light. Add half the milk and fold in flour, sifted with sugar and salt. Then add remaining milk, cream and butter. If thinner consistency needed, add more milk. Bake large pancakes on hot griddle. Place 2 tablespoons of red currant jelly on center of pancake and roll up like jelly roll. Serve sprinkled with confectioners sugar.
