Even a tried and true recipe, when you try to make it in different weather or different part of the country can fail. There is a difference sometimes between using cane sugar and beet sugar. Sometimes one too many stirs and those pesky grain will form, the next time it won't set, the third day it can be perfect. I say try again and follow the directions to the letter. If you fail again, try one of the no-fail recipes using sweetened condensed milk. Those usually work every time.

Fudge should really start to firm up right away. It sounds like you didn't cook it long enough. Are you using a thermometer or testing with water?
