According to "Living off the Sea" they mostly cook it, using a method that results in something that resembles beef jerky. There are some recipes for whale and seal steak.

When they firsts slaughter the animals there are parts they love to eat raw as a treat. But then most of the other parts are either cooked or dried and then rehydrated and cooked later. They are rather limited in their storage and preservation methods.
