Well the best thing to do is either recover them or paint them. it depends on what kind of kitchen cabinets really. but i would prefer if its wood to stain it . i would paint them but make sure you get the wood paint if not it will mess them up.

Well I see this question is old but I thought what the heck... You have a lot of options with the best being either Fluorescent or Xenon. The good thing about adding undercounter lighting is if it's not prewired it's not the end of the world. The inconvenience would be that you wouldn't have a switch to operate all the fixtures but you can have a local switch on each fixture or wire in the other fixtures after the first one. You can usually tie into a receptacle any where along the counter and voila. Feeding the wire from just under the cabinet down to the receptacle sounds easy but if you're not experienced at working with electricity find someone who is.
