In general, most people are right handed. This means that the right hand is more dexterous and powerfull than the left, and will be more performing the cutting motion of the knife, while the left hand merely holds the food in place with the fork. This is a holdover from medieval times, when you needed to have your knife in the strong hand to stab the starving peasant next to you and take their food too. Ah, those were the days!
