  • I have a few. And I have things I just 'do'. But most things revolve around method and technique rather than secret or special ingredients.
  • CHICKEN FAJITAS 2x chicken breasts 2x Peppers (I like a red and a yellow one) 1x Large onion 1x Packet of faijta mix ("Discovery" brand is best) 1x Jar of salsa 1x Creme fraiche/Sour cream (optional) 8x Fajita Wraps/Soft Tortillas Slice and chop your vegetables. Cut chicken into manageable pieces. Cook chicken first with a generous amount of faijta mix (not the whole pack, the pack should last for about 6/7 times of making the fajitas) in a non stick pan with some vegetable oil. Add your vegetables and stir. Once your veg have been cooked for a few minutes, add the salsa and keep stiring until the mixture is hot through and your vegetables are to your preference. Heat the wraps in the microwave for 30 seconds if you have a powerfull micro or longer if necessary. If you want add your creme fraiche or sour cream to a wrap and then place some of the fajita mix on the wrap before folding it the way you like it. Enjoy :-)
  • TOMATO AND POTATO SOUP 1x Tin of chopped tomatoes 5/6x Potatoes 1x Onion 2x Chicken Stock cubes 1x Pint of water 1x Teaspoon sugar salt and pepper First saute your chopped onion in vegetable oil (do not make it brown, just sort of sweat it) Then add your sliced potatoes, tinned tomatoes,sugar and your pint of water mixed with the stock. Bring too boil, then simmer until potatoes cooked (do not over cook potatoes otherwise the soup will turn too mush) A pressure cooker is preferable for this soup. When cooked, use a liquidiser/potato masher to bring it all together to a thickish consistancy. Add salt and pepper too your taste. Enjoy :-)

  • This is my most requested dish, people actually lick the slow cooker. I put this in a slow cooker for our parties. White Chicken Nachos 1 to 1 1/3 cups milk 1 1/3 pounds white American cheese, diced 1 pound diced boiled chicken, I do it in chicken broth 1/3 cup diced onion 2 teaspoons minced red bell pepper 2 teaspoons minced jalapeno, or to your taste Yellow corn tortilla chips Pour 1 cup milk into a heavy saucepan, set over medium-low heat. Bring to about 170 degrees (steaming, but not quite to a simmer). Add cheese and continue to cook, stirring frequently, until cheese is melted. Add chicken, onion, bell pepper and jalapeno; cook until heated through, about 3 minutes. If sauce is too thick, add enough of the remaining 1/3 cup milk to thin to desired consistency.
  • CHILLI CON CARNE 1x lb Lean steak Mince 1x Large Onion 1x Tin of chopped tomatoes 1x Tin of Red Kidney Beans 1x Chilli con carne mix Water (amount stated on packet of mix) Brown the mince and onion, stir mix into water and add to mince. Add the tomatoes and the drained red kidney beans. Bring to boil, simmer for 30 mins with lid on pan. Stirring it now and again. Serve with a glass of milk and a thick slice of your favourite bread, buttered. Enjoy :-)
  • New York Style Vanilla Cheese Cake. It is very creamy and has not one redeeming quality about it, nutrition-wise. The secret is vanilla paste and sour cream and only making it when no one is home (heavy feet make or opening oven can make it fall or crack). The other trick is to bake it an a really high temperature for the first 15 minutes so it crusts over on the top. It weighs a ton so I guess if you lift it a few times you may burn some calories!
