For the weight of the pendulum, the densest material possible so that it has the highest amount of energy in proportion to its surface area, which causes air resistance. For the suspension, the strongest (to keep it thin) and the one which changes length least with temperature and humidity. These tend to contradict: metal expands a lot, fibres change length with humidity.

What kind of pendulum? IF a more scientific one, then a heavy weight is what you want. Lead is good, but uranium or plutonium would be better. If you want a psychic pendulum......... whatever. The longest/tallest pendulum I have seen is at the Fermi Lab building west of Chicago. You can visit it. The building is 20 stories tall and it is like two buildings joined by an open courtyard with skylights. The pendulum moves so slowely over its 3 foot arc, taking about a minute. It is very cool in a nerdy sort of way. Its why I liked it!

For healing and metaphysical purposes the best material for a pendulum is wood because it has a neutral energy. If one were to use a crystal it could be either north pole or south pole energy, and influence the reading, and either increase or decrease the variation on the result, thereby affecting the accuracy.
