  • I make a mean quesadilla me lass. I use a tortilla and usually put a slab of turkey cold cut in between chees of my choosing with select herbs. Then I wrap it equidistanly as to make it appear as a square. Then I put the folded side down first on the pan and I cook it till crispy on both sides. It's a yummy treat.
  • Cheese, spices and that lettuce stuff.
  • I like chicken (especially with Asian chicken flavors, soy, garlic, ginger) sliced thin and layered with both cheddar and jack cheeses and then pineapple salsa on top:-)
  • Try Cilantro,in them.
  • I just LOVE Quesadillas! For a quick one I will put a 10" flour tortilla on a plate... I buy the deli-sliced chicken and turkey, along with several different cheeses. Put the sliced meat on the tortilla - overlapping just a bit - then cover with a thin layer of shredded cheese, preferrably cheddar with a bit of mozzarella. Often, however, I use other cheeses...such as fontina, gruyere, any semi-hard cheese will do. Then, I add slices of black olives - and chopped Ortega chilis. They are not hot, just add a nice flavor. On top of the olives & chilis, I do another layer of the thinly sliced meat, and then more cheese - and finally, the top tortilla. (I will usually use sliced turkey for the first layer and chicken for the 2nd layer) I generally microwave this, but it works great under the broiler too! Use a pizza cutter to cut it into 6-8 segments for eating. OMG it's SO good!
