The Mesopotamians used cuneform which were slabs of clay that you carved characters into.

People would either etch in stone/clay, write on papyrus, or Animal skins. The Chinese also used bamboo. Basically any surface you could write on!

cave walls, bones these items are our first evidence of people recording 'stuff'. (whether it was created as "art" or were simply cultural traditions in magic is not known)

In china, before the invention of paper, the chinese used bamboo shavings. For the rest of the world, papyrus was used before paper arrived. It's also note-worthy that since papyrus was easier to spread ideas than bamboo shavings, Western powers were more civilized than the chinese before the advent of paper. But once china had paper, they got ahead culturally for a few centuries.
