Yes, I've made all kinds of sausages and cured meats. A friend of ours got us going and there is no turning back. Nothing compares to homemade. You get to choose the meats and the spices ands the amount of smoke. Beef, pork, venison, rabbit, chicken, even fish ones:-)

Breakfast sausages get a hefty amount of sage and nutmeg, I love thyme in just about everything. Crushed red pepper. Marjoram more than oregano in sausage. Garlic, coriander (both seeds and the fresh, especially in rabbit sausage with cumin) And you can add cheese or spinach, sun dried tomatoes:-)
