  • I don't know firsthand, but if it does, I would think white stales quicker because it is bleached with chemicals to become white. When you say brown I assume you mean wheat? So it's a more natural bread.
  • It doesn't unless it has more fat in it. WHeat or white, without fat, it will get stale in as quick as one day. But add some fat or possibly some honey and the moisture will stay longer in the bread and the crumb will be more tender. Thus, fresher tasting bread. And don't keep it in the fridge if you can. Chilled bread stales faster even though it doesn't get moldy quickly. It will actually keep better at room temperature. Cold makes bread stale.
