I haven't found an Indian dish made with care that I didn't enjoy. We make a lot of Indian dishes and breads at home. I love playing with the spices, toasting and then grinding them. I love all the different steps they take with their recipes. Each step doing something to bring out the flavors. And at the end you have a masterpiece that is so spicy but never overwhelming. And then to sop it up with their breads? Oh, heavenly!!!

Indian food is is extremely varied and regional, but there are some standard world favorites. I would suggest trying a mild curry of some sort first. Or a hotter one if that floats your boat! :) Tandoori chicken is a widely-liked dish. You really can't go wrong trying it first. Tandoori chicken is skinless chicken that has been marinated in yougurt and spices, then cooked in a clay oven called a "tandoor." Indian cuisine also does wonderful things with lentils, pulses and vegetables. Incredible variety of flavors. Be sure and have Indian rice and naan bread with your meal!
