  • I make cuts into the meat and stuff it with slivers of garlic, rub it in butter and roll it in fresh Rosemary from the garden. Just yummy.
  • Mint and garlic, that works like a bomb, old family recipe.
  • Poke the leg with the end of a knife making 1" deep holes in each hole place a sliver or clove of garlic and a inch of scallion. MIx 1 tbs fresh rosemary (or 1 hefty tsp of dried,1 tsp each salt and pepper, 3-4 minhced anchovy fillets (opt) with 2 TBS olive oil. Rub all over the lamp. Let sit at room temperature for 1 hour, preheating oven to 425°. Roast leg for 30 minutes on a nest of cut up root veggies like carrots potatoes, and onion chunks (this is your rack)with 1/2 cup water in bottom of pan. After 30 minutes, lower heat to 350°. If you need to add more water. Roast till temp inside is 130°F. Let rest for 20 minutes before carving.
