  • Heat oil and spices (garlic, basil, oregano, bay). Add some red wine when the oil is hot. Then put in one or two tins of diced tomatoes, and finely diced chili peppers. Bring to boil, then simmer until reduced and tomatoes are sweet. Cook preferred pasta. Mix in sauce and top with cheese. If you want to make this an oven bake, mix sauce through (you will definitely need the two tins of tomatoes), and also mix in mozzarella cheese. Bake in oven. Of course, if your vegetarianism doesn't let you eat cheese, then just serve the pasta and sauce.

  • * 2 tbsp olive oil * 2 onions, finely chopped * 1 red pepper, finely chopped * 1 yellow pepper, finely chopped * 3 carrots, finely chopped * 600g of chopped tomatoes * 170g organic soya mince (soaked and drained thoroughly) * 1 garlic clove, crushed * Spices (use these according to taste for mild-medium spice): * 1 tsp chilli powder * 1 tsp ground cumin * 1 tsp paprika * Herbs (use these according to taste): * 1/2 tsp oregano * 1/2 tsp basil * Salt & black pepper to taste * 250g uncooked pasta spirals Place 2 litres of water in a large pan and begin to boil. Heat 1 tbsp of olive oil in a large frying pan and add the chopped onions and pre-soaked soya mince. Cook on a medium heat for 5 minutes. Add the spices, vegetables, 200g of chopped tomatoes and garlic to the pan. Cook on low heat for 20 minutes or until the excess water has evaporated. Add the uncooked pasta spirals to the pan of boiling water along with 1 tbsp of olive oil. Cook according to packet instructions. Add the remaining chopped tomatoes to the soya mixture; stir well and heat gently for 2-3 minutes. Once the pasta is cooked, drain it, serve on a plate and top with the desired amount of soya mixture.
