I love black bean in dried beans, especially for making refried beans. And I love green beans, steamed or roasted and add some crispy bacon and caramelized onions. Yum!!!

I like regular Pork n Beans. Sometimes I'll cook up some hamburger and oinion and mix in with the beans. Boston Beans are good, love the hamhock and beans.

Do I HAVE to pick one? Sheesh! I like ham hocks and lima beans. Add hot sauce and maybe corn bread (if I'm in the mood for corn bread) I like pinto beans. Pork and beans are to die for, too. Red kidney beans in my homemade chili is AWESOME! (Even if my wife thinks putting beans in chile spoils the chili.) Green beans, seasoned with a strip of bacon. Black eyed peas...ummmmmmmmm! Man, I don't think there's a bean I DON'T love!

I'm an "old-time" pinto bean lover from way back. I love them served in a bowl, over cornbread, fried potatoes, and plenty of ham-hocks ... sometimes with a little "Chow-Chow" thrown in!

I have a favorite receipe that uses kidney beans, pinto beans, white "Butter" beans, baked beans, lima beans and one more bean that I cannot remember, all cooked together in a crock pot. It is a pot luck favorite at my church.

I'm really fond of lentils. Although I'm not a vegetarian, I do enjoy some vegetarian dishes. The lentil recipe in Deborah Madison's "Local Flavors" is my favorite. It starts with a vegetable stock (one that includes dried porcini mushrooms) that is fortified by red wine. It is then reduced slightly to thicken and concentrate the flavors. The sauce is poured on top of braised vegetables (parsnips, carrots, mushrooms) and cooked French lentils (a.k.a. green lentils).
