I sometimes use balsamic vinegar - you don't need quite as much as with white wine (make up the extra with a bit more stock), but it does give a nice taste to the risotto.

I thought white wine was vegan. All the alcohol boils off, anyway. If you can't use wine, try to find a recipe that doesn't use it. If you don't know which wine to choose: http://www.ochef.com/634.htm

Apple cider vinegar would also be good. Start with a teaspoon of it, you can always add more. I think the key is to get a bit of the sour taste into the dish.

Home made vegetable stock. It is a bit time consuming to make, but you can choose the ingredients that you like. I like onions, celery and carrots. Shallots or scallions are a good too.

You could use apple juice with a splash of apple cider vinegar or white grape juice with the same.

How about the non alcoholic wine. Liquor stores have them and so do the supermarkets where I live in Canada.
