It is just a way of working out the average age an animal will live in comparison to a human being, dogs are said to have an average of one seventh of the human lifespan
-
It's only an average of how a dog ages compared to humans. In reality a dog will age faster than the 7/1 ratio for the first few years, and when they are old it is something like 4/1. It is just a simple way to ballpark how old your dog is I suppose.

I've wanted to change that to 5 dog years to one human year...

It isn't. In reality, the first year of a dog's life is like the first twenty of ours, and each year after that is like five years of ours. And that's only for average-sized dogs. For very large dogs you would the first year is like twenty and each year after that is like eight; for very small dogs, the first year is like twenty and each year after that is like three.

General rules of thumb: 1) The smaller the organism the shorter its lifespan. 2) The smaller the organism the faster its heart rate. Think of the heart as a clock that only has a certian number of ticks and tocks. The faster it ticks and tocks the less time you have. A dog's heart rate is about 90 bpm whereas ours is only 60. So they will age quicker than us.
