Is a 3.8 liter 1997 Pontiac bonneville 3800 series an interference engine or a non interference engine?

I don't know the answer to that question, but it's not really relevant. The GM 3.8L V-6 does NOT have a timing belt. Hence, there is almost no chance that you will have a catastrophic timing failure leading to engine damage. The timing chain/sprockets will make a great deal of noise as they wear/stretch which will give you plenty of warning to replace them before they fail. Good luck
