Can someone explain the horse in the bed scene in the movie airplane. I realize it is supposed to be adult humor but don't get it.

In the movie "The Godfather," a man owns a racehorse. He makes the mob mad. He wakes up one day to find they have decapitated his racehorse and put the head under the covers at the foot of his bed (as a threat).
