I was having this convo with a guy and I started laughing randomly in the middle of our convo because I thought he was cute. No part of our conversation was funny. When he saw me laughing, he started laughing with me. He went from a stoic expression to laughing when he saw me laugh. His laughter distracted him from his task. When our convo ended, he avoided eye contact with me and I saw that he had a smile on his face when he thought I wasn't looking. Is he interested?

There's NOT enough info in what you said to know for sure. If he's not mature enough to let you know when he really is interested, the best that you can do is wait.
