  • If you steam 'em or fry 'em: you're good. If you boil 'em, lots of the nutritional value ends up in the water, which is typically discarded.

  • If you want to boil them, then don't do it to an inch of their lives, my mother use to do this, and vegetables lost colour and were limp, you can use the water they are cooked in as gravy. But I'm sitting here eating raw Brussels spouts, like mini cabbages. I love raw vegetables, they rarely make it to any cooking process.
