  • I am rather partial to duckling over full-grown duck. I don't know if that makes me a barbarian or a gourmand.
  • Of course. Lamb is much tastier than Mutton. Same thing goes for some vegetables too. Baby carrots, baby spinach, baby lettuce... all better than their tougher adult counterparts.
  • Most younger animals are tastier. Squabs are a 28 days old. Frying chickens are only 6-8 weeks old. Rabbits are 8 weeks old. Pigs are just a few months old and suckling pig is very young. Can't get any younger than eggs:-)
  • Baby animals are always more tender than adult ones...I know it sounds horrible, but look at a human baby and then compare it to an adult...the difference in tenderness is enormous.
  • Veal is actually a little tasteless. Like many other mildly flavoured meats, it takes on the flavours of whatever you cook it in or cover it with. For example, think of eggs, chicken, pork tenderloin, some whitefish and escargots.
  • Well, I have to disagree and say that I don't find veal delicious. I find it oddly soft in texture, and bland tasting. I don't eat it. However, I will say that lamb is much better than mutton.
