The snap count is the number of times the quarterback will say "hut," or some other sound, before the snapper snaps the ball to him. This is set prior to the play ("on three" for instance), so that the offense will know exactly when the play is to begin, while the defense might jump early (getting an offsides penalty) or late (giving the offense an advantage).
